Chocolate Cake Glaze

This coordinates with yesterday's chocolate cake recipe. It's so easy to make.

Chocolate Cake Glaze

Ingredients:

1 (14oz) can of sweetened condensed milk
1 cup milk or semi-sweet chocolate chips (I use milk chocolate)
1 tsp. vanilla extract

Directions:

  • In a saucepan, over medium heat, combine the chocolate chips and condensed milk. Melt, stirring frequently,  until the chocolate is melted and mixture is smooth. DO NOT ALLOW TO BOIL!

  • Once smooth, remove from heat and mix in vanilla. Let sit for 30-45 second. Drizzle over cake. Eat!

National Chocolate Cake Day

(Yes, I know I disappeared for nearly a month. Things are crazy in real life. Anyone who has children can vouch for a hectic life. I'm hoping to get back into blogging, but we'll see.)

In honor of National Chocolate Cake Day (yes, it's a real thing), I'm bringing you my favorite chocolate cake recipe.

Chocolate Cake:

Ingredients:

1/2 cup vegetable oil                  2 tsp. vanilla extract
1 cup boiling water                     1 cup milk
1 1/2 tsp. baking soda                1 tsp. salt
1 3/4 cups all purpose flour        3/4 cup cocoa
2 eggs                                        2 cups sugar
1 1/2 tsp baking powder

Directions:

  • Heat oven to 350°F. Grease and flour two 9-inch round baking pans.
  • Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be  extremely thin). Pour batter into prepared pans.
  • Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely.
